ingredients

2 tablespoons butter (or margarine)
1 (12 ounce) smoked sausage, beef, Hillshire Farm, cut into 1/2-inch cubes
1 bell pepper, green, chopped
1 onion, chopped
6 large potatoes, baked
³⁄₄ cup sour cream
¹⁄₂ cup milk
salt, to taste
black pepper, to taste
1 ¹⁄₂ cups cheese, cheddar, shredded
¹⁄₃ cup chives, fresh, chopped

directions

Preheat oven to 375 degrees. Melt butter in large skillet over medium heat; add sausage, green pepper and onion. Cook, stirring occasionally, 5 to 6 minutes or until vegetables are tender.
Slice potaotes in half lengthwise. Scoop potato out of each half, leaving a 1/4 inch thick shell. Combine potato pulp, sour cream, milk, salt and black pepper in large bowl, mashing until smooth. Stir in sausage mixture, cheese and chives. Spoon mashed potato mixture into potato shells.
Place filled potato shells on large baking pan. Bake 30 minutes or until tops are lightly browned and filling is hot.

I loved this! I love smoked sausage, although I use Conecuh County Smoked Sausage, not Hillshire Farms. This was an extremely filling meal, and very satisfying. The smell of the sausage, onions, and peppers cooking before loading into the potatoes was so tempting....I wanted to just go ahead and eat the sausage mix! But this is worth the wait. Thanks for sharing this yummy recipe!

These are really yummy! I sauteed in less than a tablespoon of oil, added half the cheese and used nonfat sour cream to make these healthier. I did not have any milk, so I used buttermilk, which worked out well since it gave it even more tang. Served 5, eaten as an entree.

This is a nice dish. I used regular Hillshire Farms smoked sausage, and we enjoyed the blend of veggies and sausage. We did find that something was missing, so I ended up serving with hot sauce and ketchup, which helped fill in the blanks. Thanks for sharing!

I even prepare meals for my co-workers and take to work. They really enjoy them. Some foods I prepare, they have never had. My biggest meal of the year is at Christmas. Since I am not married and no children, my mother (since my father passed in 2003) and brother and his family comes for Christmas dinner. He has 8 children (whom are all grown up) and 7 grandchildren.
