  • Add pecans to cream cheese, mix well. Spread evenly on ham slices. Roll the slices. Chill.
  • Cut the peppers lengthwise into 16 wedges, discarding the pith and seeds.
  • Peel the carrots and cut into thin lengthwise strips with the peeler. Pleat the strips on colored round toothpicks, accordion style. Chill in icewater, until time to assemble.
  • Assemble just before serving. To assemble, slice ham roles in half lengthwise. Lay each half in a green pepper wedge (the boat.) Stick a carrot sail into each ham roll.
