The Dove's Nest White Chili

  • Heat the olive oil in a large stockpot over medium-high heat.
  • Add the onion.
  • Saute for 3 to 5 minutes or until softened.
  • Add the garlic.
  • Cook for 1 to 2 minutes longer.
  • Do not brown.
  • Add the tomatoes, tomatillos and jalapeno.
  • Cook until the tomatillos are tender, stirring occasionally.
  • Add the chicken stock, green chilies, chicken, oregano, cumin, cilantro, beans and lime juice.
  • Cook until heated through, stirring frequently.
  • Season with salt and pepper.
  • Ladle the chili into serving bowls.
  • Serve garnished with a dollop of sour cream, shredded cheese and fried tortilla strips.

  3. Loved this wonderful, tasty soup. I made half a recipe and it was perfect for the two of us. I used fresh tomatillos from the garden. one serrano with half the seeds, Rotel, 2 chicken breasts, more broth, and lots of cilantro. Let it simmer for an hour, YUM!
     
  4. This chili was so good, the tomatillos give it such a bright taste! I added a bunch of white paper and some cayenne because we like it spicy...thanks for posting!
     
  5. Recently some friends and I drove to Waxahachie to eat lunch at the Dove's Nest. What a fun day and the food is great. We bought the cookbook and this is the first recipe I made. Love this chili, I am glad to see the recipe is posted already - saves me from typing it up. Thanks for posting this.
