- Peel the pototoes and put them through the food processor, avoid overprocessing they should still have some texture. In the bowl combine processed pototoes, egg, flour and salt.
- Fry in the hot pan with plenty of vegetable oil. Put a tbls of dough in the pan and flatten in to ab. 1/4", turn and fry the other side, it will give you very crunchy latkes.
- Serve fresh or keep in the oven for a while.
- They can be served in many ways: my husband likes them just with sugar, they good with sour cream and sugar, I like them with creamed cheese mixed with sour cream, green onion and salt. They can be served with gulash as well (in Poland they called Hungarien Latkes).

I grew up in Poland before moving to Canada 25 years ago. Couple of yours ago we bought a house in Casa Grande, AZ, where we spend winters.
