The Great Aussie Fry Up!

ingredients
- olive oil flavored cooking spray
- 4 eggs
- 4 slices bacon
- 2 medium tomatoes, cut in half
- 500 g mushrooms
- 1 (440 g) can baked beans
- 4 thick beef sausages
- 12 raw tiger shrimp, peeled and deveined
- 4 slices bread, toasted
- 4 teaspoons butter
- 1 liter orange juice, freshly squeezed
- 1 liter brewed coffee, freshly brewed

POTATO FRITTERS (hash browns)
- 1 egg
- 1 cup potato, grated
- 1⁄2 small red onion, finely chopped
- 1⁄2 cup wholemeal self-rising flour
- 1⁄3 cup skim milk
directions
- Spray a large frying pan with olive oil spray. Place sausages in heated pan, and cook until browned and cooked through. Spray cut edge of tomatoes with olive oil, and place that side down in saucepan. Add bacon and eggs to pan in the last minutes of the sausage cooking, and cook to your liking.
- Meanwhile, cook sliced mushrooms in a medium saucepan, or small frypan until tender.
- Place prawns in frying pan, cooking about 2 minutes on each side, or until pink and cooked through.
- Cook potato fritters according to the recipe below.
- Lightly toast bread, and butter one side.
- On each plate, place 1 slice toast, 1 egg, 1 sausage, 1 rasher bacon, 1 tomato half, and 3 prawns. Divide the mushrooms and baked beans between the plates. Serve with glasses of freshly squeezed orange juice, and a mug of hot freshly brewed coffee!
- Don't forget to go for a nice long walk after, to burn off all those kilojoulles! Lol.

POTATO FRITTERS:
- Whisk egg in a medium bowl; stir in potato, onion, flour and milk.
- Spray large frying pan with cooking oil. Pour large spoonfuls of batter into heated pan; cook 2 minutes or until bubbles appear. Turn fritters; cook until lightly browned on the other side.

Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
