  • To make sauce, heat butter in medium saucepan.
  • Add shallots and cook over low heat 3 minutes or until tender, but not brown.
  • Add orange juice and bourbon, increase heat and continue cooking until liquid is reduced to 1/2 cup.
  • Add cream and reduce until slightly thickened.
  • Add honey, vinegar and season with salt and pepper.
  • If sauce is too thin, make a small amount of cornstarch and cold water slurry. Add it to sauce to thicken (only if needed).
  • To make chicken, mix flour, thyme, pecans, salt and pepper. Dredge chicken in flour mixture.
  • Heat small amount of olive oil in a large saute pan.
  • Add chicken and saute until golden brown.
  • Pour sauce onto each plate and place chicken breast in center. Serve addition sauce separately.

  2. The sauce in this dish was divine! I think Sauce Lover really lives up to her name! From the first bite DH & DS were saying they'd eat this one again in a heartbeat.
