- 8 eggs
- 3 tablespoons sour cream
- 1 tablespoon water
- salt & freshly ground black pepper
- 2 tablespoons butter
- 1⁄2 - 3⁄4 cup grated cheddar cheese
directions
- In a medium sized bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
- Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally, until just set.
- Stir in the cheese just before serving.
- Cook until you reach desired consistency.

My wife has professed for years that she does not like scrambled eggs. I made these this morning with a couple modifications. I fried bacon and then cooked the eggs in the bacon grease so I skipped the butter. I used one and one half table spoons of sour cream, one and a half table spoons of Herdez guacamole salsa. I replace the water with the water sitting on top the sour cream. I also went easy on the amount of cheese. The wife ate them, liked them, raved about them, and later demanded to know how I made the best scrambled eggs she ever tasted. :)
