"This is from Paula Deen's The Lady and Sons restaurant in Savannah, Georgia. My son prompted me on a quest for tender, perfect scrambled eggs, and this is the best I've found. I like my scrambled eggs firmly cooked, but these still stay tender. They are perfect!"

  • In a medium sized bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
  • Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally, until just set.
  • Stir in the cheese just before serving.
  • Cook until you reach desired consistency.

  2. What is the reason for cooking the eggs on low? I have tried this recipe on low, med, and med-high flames and have yet to discern a difference.

  1. Delicious, fluffy, slightly creamy scrambled eggs. I used greek yogurt, which is healthier than sour cream but still has the same consistency and tanginess. This is how I will make scrambled eggs from now on!
     
  2. My wife has professed for years that she does not like scrambled eggs. I made these this morning with a couple modifications. I fried bacon and then cooked the eggs in the bacon grease so I skipped the butter. I used one and one half table spoons of sour cream, one and a half table spoons of Herdez guacamole salsa. I replace the water with the water sitting on top the sour cream. I also went easy on the amount of cheese. The wife ate them, liked them, raved about them, and later demanded to know how I made the best scrambled eggs she ever tasted. :)

Tweaks

  1. I used milk instead of water in this. The eggs had a great consistency and a wonderful flavor that I'm sure came from the sour cream. I'll make these again, but I think I'd add onions for a little crunch.
     
  2. Used homemade yoghurt and cornflour instead of the sour cream (dont get this in India) and also added some cilantro and pepper powder for garnish. Nummy! :) Fay
