  • Preheat oven to 375F and lightly grease cookie sheets.
  • In a large bowl, combine sugar and butter; beat well until fluffy.
  • Add egg and beat well.
  • Stir in zucchini.
  • In another bowl, sift dry ingredients together.
  • Add to butter mixture and blend well.
  • Stir in raisins and nuts.
  • Drop by teaspoonful onto prepared baking sheet about 2" apart.
  • Bake for 10 to 12 minutes or until golden brown.
  • Remove to a cooling rack.
  • When cool, store in a tightly covered container.
