The Omg I Found It, Cheesecake!

"In desperate search through the interwebs, I've searched high and low for this EXACT recipe and couldn't find it ANYWHERE. It was featured in, gasp! A walmart flyer. (I know, pretty classy sounding already, isn't it?) There are variations on this website, but not this EXACT one, so I had to post it well mainly.. for selfish reason. I don't want to have to search for it again. Anyway, if you choose to try it, you will not be disappointed! Caramel topping, pecans, and brown sugar cheesecake, how could you ever go wrong?"

  • Preheat oven to 325°F.
  • Mix graham cracker crumbs, melted butter and granulated sugar and press firmly into a 9-inch spring form pan, allowing it to go up against the sides slightly.
  • Beat cream cheese, brown sugar and vanilla in a small bowl on medium speed until well blended, then add both eggs and mix just until incorporated fully.
  • Pour over crust and arrange pecans around the edge. (I usually use more pecans, crush them and use them for topping later, too).
  • Baked 40-45 minutes or until center is almost set.
  • Cool on wire rack COMPLETELY, then refrigerate at least 4 hours.
  • Drizzle with caramel topping and more pecans if desired just before serving.
  • Enjoy!
  • A few tips or suggestions. You can use margarine for the crust and low-fat cream cheese. This won't be a white cheese cake, or a high rising one, feel free to post variations on it, I'm always up for new ideas. :).
