This sauce can be used as a mezze (Greek: appetizer) for dipping bread, or with meats, poultry, kefta- ANYTHING!
Additionally, one more alternative of this recipe is to ommit the dill and oregano, and add about 1 Tbsp of freshly chopped mint. Very refreshing with The Parker's Tandoori Chicken recipe.”

Ingredients Nutrition
- 1 (5 1/3 ounce) Greek yogurt (Whole Foods carries it, as well as most major-chain grocery stores, just ask. As a LAST resort, use)
- 2⁄3 cup cucumber
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1 teaspoon garlic, minced
- 1 tablespoon extra virgin olive oil
- 1⁄2 teaspoon dill
- 1⁄2 teaspoon oregano
Directions
- Cut cucumber in half and spoon out the seeds. Take a grater, or shredder (whatever you have) and grate the cucumber. If you don't have either, give it a small dice.
- Squeeze all the excess water out of the cucumber, using paper towels or dish towels. Srinkle the salt over the cucumber to further dehydrate it.
- Finally, mix all the ingredients together and refrigerate. Can be made several hours ahead, or even a day.
