  • Beat the egg yolks with sugar until you get something like an eggnog then add the mascarpone cheese and mix well the mixture.
  • Whisk the egg whites until stiff with a pinch of salt.Gently add to the mix and work with care.
  • Make coffee and add 2 tablespoon of sugar.
  • Prepare a roasting pan or tray.
  • Dip the savoiardi in the coffee and form a layer then spread on a generous coat of cream.
  • Sprinkle entire surface with cocoa.
  • Continue like this for three layers or more if you prefer.
  • Place the Tiramisù in the fridge for a few hours before serving.
