The Ultimate Chocolate Brownie Muffins

"This recipe goes back to when my son was small and that is quite a while back, and I still make them, these are moist and rich no need for an electric mixer for this recipe it's all mixed with a wooden spoon, I have even added in chopped walnuts or mini chocolate chips, my recipe #89207 works great with these :)"

  • Set oven to 350°F.
  • Line 12 muffin tins with paper liners.
  • In a medium bowl combine cocoa and baking powder; mix to combine.
  • Add in boiling water; mix well with a wooden spoon to combine.
  • Add in the melted butter and vanilla; mix well.
  • Add in the sugar, mix well with a wooden spoon.
  • Stir in eggs with a wooden spoon; mix until combined.
  • Mix the flour with salt; add in the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
  • Add/mix in mini chocolate chips or walnuts (or 1 cup of both!).
  • Using an ice cream scoop fill each of the muffin tins almost to the top.
  • Bake for 25-30 minutes or until muffins are done, don't over bake! (might take a little longer, depending on how full the muffin tins are with the batter).
  • Cool, drizzle glaze over or frost with buttercream frosting.

  1. Very chocolatey. However, mine came out REALLY dense. I'm not quite sure where I might have gone wrong; my mom said the melted butter should not have been hot, I think it might have been because I added the dry ingredients to the wet instead of the other way around it may have led to overmixing. Either way, they still taste really good; I used walnuts and chopped dark chocolate. And only used 1 cup of sugar. Would make again, though more cautiously, because I want to master making muffins!

  3. These were excellent muffins. I made as directed except substituted 1/4 c coconut oil and 1/2 c unsweetened applesauce for the 3/4 c of melted butter. They were moist and delicious. I also added the miniature chocolate chips to mine. I got 12 regular muffins and 20 mini muffins with 1 recipe. DELICIOUS!!!!!
     
  4. Another triumph, KittenCal. Made with Splenda, of course (DH is diabetic) but tasted and it's the absolute brownie texture. I used a cup of coconut and a half cup (one bar) of no sugar added dark chocolate. YUM!
     
  5. I was really disappointed in these muffins. I made them for an extra special birthday treat, but they had such a weird texture and were not that tasty. I'm sure it's operator error, but I definitely won't make these again. Bummer!

Tweaks

  1. Used muffin method for mixing. Used 1/2 C butter and 1/4 C veg oil instead of 3/4 C butter. Used mini chocolate chips. Made 18 muffins and took about 22 minutes to bake.
     
  2. Wow so rich and absolutely delicious!! Not usually a fan of choc muffins but these were amazing - can't wait to mix up the additions!! Even my usually not so sweet tooth son devoured and wanted more!! Thanks - definitely a new addition to our constants!! :D ... On the cheap so subbed butter with oil - had to beat with a mixer to add into cocoa and water but the rest of the process ran smoothly.

  4. This recipe was very easy. It was simple to follow. The muffins turned like the professional ones we saw except we used chocolate chips instead of walnuts which made the appearnce change. We altered the serving size, this didnt work well becuase it was hard to add the ingriedents because we didnt have the exact amount on the equipment. If i make this next time i would make the amount of ingredients precise so it won't bother me. The muffins looked like brownies, very chocolate and tasty. I would recommend this recipe to people because it is simple to make and very DELICIOUS!
     
  5. These turned out excellent, I used white chocolate chips instead of chocolate...and instead of vanilla I used mint extract and it tasted great.
