The Very Versatile Garlic Dip or Spread

  • Shred cheese coarsely but with short strokes (we use muenster because it is so cheap and yummy and it is extremely moist, but you can use any other cheese of similar consistency. Don't use a cheese like parmesan or romano because the spread won't have the right texture.
  • Combine mayonnaise, sour cream (you can also use low-fat yogurt in place of sour cream to save a few calories) and shredded cheese.
  • Use a garlic press to mince the garlic directly over cheese mixture (you should use a garlic press because it will evenly distribute the juice of the garlic).
  • If you crush it on a cutting board you will lose all the juice and your spread won't have the right flavor.
  • Feel free to add additional cloves of garlic if you can handle it.
  • My wife and I haven't been able to make it past five.
  • Mix well and serve.
  • We usually eat spread on a cracker or dark bread like rye but you can put it on just about anything.
  • Enjoy.

  1. Oh my,i forgot to review this when i made it,so here goes now. I LOVED IT!!!!! It`s a very versatile dip/spread.I used mozzarella cheese & soy free mayo because of my partners allergies & of course a few extra garlic cloves,i didnt have a garlic press but chopping it worked just as well.Very yummy. Thanks for posting a winning recipe David!
     
  2. I just made this, but without the cheese to use with my fajitas tonight. I love garlic and I used 4 cloves. It tastes great. I will definately make it with the munster cheese next time to use as a spread.
     
  3. We just spread this on toasted slices of bread, but it was delish! Would probably toast it under the broiler next time. YUM.
     
  4. I thought this was way too garlicky for a dip, and I really love garlic. I had to double all the other ingredients to tone down the pure garlic flavor. I can see how this would be good in small amounts on a sandwich but I don't think it has dip applications unless the garlic is reduced or the other ingredients are bumped up. Thanks for posting.
     
  5. This is so delicious. I plan on spreading it on my french rolls and then I will put them under the broiler for my beef dip sandwiches. Excellent flavor. I used 3 large elephant garlic cloves and mozzarella cheese. Can't wait to eat!!!!!

I live in the food friendly town of Amherst, MA which has really peaked my interest in cooking. Being surrounded by such good food I found myself wanting to create some myself. However I don't eat red meat so you won't see any such recipes from me, however everything else is free game.
