Thin Mints (Gluten-Free)

ingredients
- 6 ounces milk chocolate
- 1 teaspoon mint extract (or more to taste)
- 20 gluten-free crackers
directions
- Microwave chocolate until melted. Mix until no lumps remain.
- Add mint extract and stir thoroughly.
- Dip crackers one at a time in chocolate-mint mixture, making sure to cover both sides completely. (I used tweezers so as to not cover my hands in chocolate).
- Place chocolate dipped crackers on wax paper to harden. 6oz chocolate may make more cookies than 20.
- Chill to speed up hardening.
