Thin Mints (Gluten-Free)

"Easy way to satisfy you're craving for Girl Scout Thin Mint cookies while still remaining Gluten-Free. I used Glutino brand crackers (original flavor): http://www.glutino.com/content/view/80/114/ although you're free to experiment with other brands and flavors of crackers."

  • 6 ounces milk chocolate
  • 1 teaspoon mint extract (or more to taste)
  • 20 gluten-free crackers

  • Microwave chocolate until melted. Mix until no lumps remain.
  • Add mint extract and stir thoroughly.
  • Dip crackers one at a time in chocolate-mint mixture, making sure to cover both sides completely. (I used tweezers so as to not cover my hands in chocolate).
  • Place chocolate dipped crackers on wax paper to harden. 6oz chocolate may make more cookies than 20.
  • Chill to speed up hardening.
