- 2 tablespoons agave nectar or 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1 tablespoon virgin olive oil
- 1⁄2 teaspoon fine sea salt
- 1⁄4 teaspoon ground black pepper
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 1⁄2 cups green beans, steamed and cooled (about 6oz raw)
- 1 large tomatoes, seeded and diced
- 1 cup gouda cheese, diced
- 1⁄2 red onion, diced
directions
- In a large bowl, whisk together agave nectar (or honey), mustard, vinegar, oil, salt and pepper.
- Add black beans, green beans, kidney beans, tomato, Gouda cheese. and onions and toss.
- Refrigerate and allow flavors to blend for at least 30 minutes and up to 1 day.
- Taste just before serving.
- Add salt, pepper or vinegar a little at a time if the flavor needs perking up.
