Three-flavoured Rice With Cheddar Cheese Balls

For fried rice
- 2 tablespoons oil
- 1 clove garlic, peeled,washed and sliced
- 8 red chilies
- 1⁄4 cup spring onion, washed and finely chopped
- 1 cup red bell pepper, washed and finely chopped
- 1 tablespoon soya sauce
- salt, to taste
- 1 teaspoon chili sauce
- 1 tablespoon fresh basil leaf
- 1 tablespoon chicken stock or 1 tablespoon vegetable stock
- 1 cup steamed rice

For Chutney rice
- 1 cup steamed rice
- 1⁄4 cup coriander-mint chutney

For saffron rice
- 1 cup steamed rice
- 4 -5 saffron strands, soaked in
- 4 tablespoons warm water
- salt, to taste

For cheese balls
- 2 teaspoons dried oregano
- 2 tablespoons fresh coriander leaves, washed and finely chopped
- 4 cups grated cheddar cheese
- 8 -12 almond stuffed dates
directions
- To prepare the fried rice, heat oil in a large wok.
- Add garlic, red chillies and spring onions.
- Saute for a few minutes.
- Toss in the red bell pepper, soya sauce, salt, chicken or veggie stock and chilli sauce.
- Saute for a few minutes.
- Add rice and basil leaves.
- Stir-fry for 5 minutes.
- Keep aside.
- Now, prepare the chutney rice by combining the rice and chutney.
- Keep aside.
- Next, prepare the saffron rice.
- To do so, combine the rice, saffron and salt.
- Mix well and keep aside.
- Then prepare the cheese balls.
- To do so, add dried oregano and corriander to the grated cheese.
- Knead into a dough.
- Divide the cheese dough equally and shape into balls.
- Create a depression in each ball and fill with one almond stuffed date.
- Close each ball carefully and keep aside.
- Now, arrange the three-flavoured rice in an ovenproof glass bowl.
- Arrange the cheese balls over the rice.
- Place under a hot grill in the oven until the cheese melts.
- Make sure you dont overcook it or the cheese will burn.
- Serve hot.
- Enjoy!
