  • Combine first 7 ingredients. Line each tortilla with a lettuce leaf. Spoon 1/2 cup bell pepper mixture down center of each tortilla; roll up.

  1. These were wonderfully tasty!! My guests loved them. I followed the recipe to a tee other than the feta. I used goat cheese instead, yet my guests still raved about them. To my understanding goat cheese is sweeter tasting and feta is more salty. The roasted peppers easily go with either of the cheeses, so if you like one flavor over the other you can't lose.
     
  2. Avoid any kind of Pin Wheels for your party at all cost. It is usually dry and tastes like cardboard. I even used high end tortilla bread and philly cream cheese. It definitely looks pretty and inviting for sure but comes out dry and tasteless; and the bread is too doughy and bitter.
     
  3. I added a small spread of herbed cheese on the tortilla, I loved the roasted red peppers, but added fresh parsley and dried oregano vs dill just because my friends are not big dill fans. And I like arugula rather than curly lettuce which I think gave it a little bit and easier to work with. Overall a very good recipe. I have made various version, but enjoy the peppers and feta. I did roast mine, but I had a lot of hand.
     
  4. these are wonderful, I made a mixture of butter, garlic and parsley then spread it on the tortillas before placing on the lettuce leaf and I used roasted peppers in a jar that made these a snap to put together, thank for sharing Kitty, we loved these!
     
  5. hi-5! this is really awesome, some might think this is kinda weird but before i rolled up the tortillas i added some sweet chill sauce, no reason but i like it a lot... it wasn't at all conflicting with the rest of the flavors, so try if you dare! thanks m8y
