- 1⁄2 cup dark brown sugar
- 2 egg whites
- 2⁄3 cup applesauce (unsweetened)
- 1 teaspoon vanilla
- 1 1⁄2 cups oat flour
- 1⁄4 cup nut flour
- 1 teaspoon baking soda
- 1⁄4 cup ground flax seed
- 2 1⁄2 teaspoons cinnamon
- 1⁄4 teaspoon nutmeg
- 1⁄4 cup whole flax seed
- 1 1⁄2 cups old-fashioned oatmeal
- 2⁄3 cup raisins
directions
- Combine sugar and vanilla.
- Add egg whites and applesauce.
- Mix in flours, spices, baking soda and GROUND flaxseed.
- Stir in oatmeal, raisins, and whole flaxseeds.
- Drop on cookie sheets lined with parchment paper for easy removal. Flatten cookies with a fork.
- Bake at 350 for 10 minutes.
