  • Line a 22cm square pan. Heat oven to 160°C.
  • Melt butter and half the chocolate, set aside to cool.
  • Whisk eggs and sugar until thick and pale. Add melted chocolate mixture, finely chopped chocolate, ginger and thyme.
  • Sift flour and baking powder and salt. Gently fold through the chocolate mix.
  • Spoon cake mixture into the lined pan and bake for 1 hour and 10 minutes or until firm on top.
  • Cool in pan.
  • For the chocolate glaze, melt chocolate, butter and cream.
  • Cool slightly until a spreadable consistency, then spread over the cake.
  • Cut into squares.
