Directions

  1. Place potatoes in cold salted water, bring to the boil and cook 15 minutes or until tender. Drain, return to the pan and add butter, milk, salt and pepper and mash until combined. Set aside and keep warm.
  2. While potato is cooking, heat half the oil in a non-stick frypan over medium heat, add the cabbage and ham and cook for 3-4 minutes until cabbage has wilted. Stir through mashed potato and keep warm.
  3. Add remaining oil to the pan. Sprinkle the pork with thyme, salt and pepper. Cook for 4-5 minutes each side or until cooked through.
  4. Serve with mash and any other sides you like.
