  • 4 cups bread cubes (1/2 loaf makes about 4 cups)
  • 12 cup butter, melted
  • 12 cup finely cut onion
  • 12 cup finely cut celery
  • 1 teaspoon salt
  • 1 teaspoon thyme

  • A few days before, tear bread into small cubes. Allow to sit out to stale up.
  • Combine all ingredients except bread in frying pan. Saute slowly until vegetables are slightly transparent.
  • Stir in bread cubes until all are coated with butter and ingredients are mixed evenly.
  • Stuff into bird at both ends. Skewer openings closed.
