  1. Beat egg yolks with sugar until creamy.
  2. Add mascarpone.
  3. In a separate bowl, beat egg whites with cream of tarter Or salt until the bubbles are completely dissolved and thick.
  4. Add the remaining sugar little by little. Continue beating until it becomes thick and firm.
  5. Pour the batter into the egg whites and fold.
  6. Dip the lady fingers into the coffee, one by one, and arrange them on a small tray.
  7. Spread the cream.
  8. Sprinkle with the cocoa.
  9. Repeat the procedure for every layer.
  10. Let it stay in the refrigerator for at least of 6 hours before serving.
