Tiramisu for Two (From Taste of Home's Cooking for 2)

"I found this in "Taste of Home's Cooking for 2" magazine. I plan on making it for me and my husband's first wedding anniversary. This one seems pretty simple and would probably look lovely if served in martini glasses. It should also be pretty simple to double or triple for a crowd."

  • Line the bottoms and sides of two 8 oz ramekins or custard cups with ladyfingers, arranging them to resemble a spoke pattern.
  • Brush with 1 tbsp coffee; set aside.
  • In a small mixing bowl, beat Mascarpone cheese and confectioners' sugar until smooth; beat in chocolate syrup on low speed.
  • In another mixing bowl, beat cream until stiff peaks form.
  • Fold cream into cheese/sugar mixture.
  • Spoon into ramekins.
  • Drizzle with remaining coffee and dust with cocoa (you probably will not use anywhere near 1 tbsp of cocoa just to dust it).
  • Refrigerate until serving.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born. The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
