directions

  • Blend onions, ginger and scotch bonnet chilies into a paste, peel plantains and blend together with spicy paste.
  • Add salt and flour and mix well, If mixture is too soft, add a tablespoon or two of flour; the mixture must fall off a wooden spoon slowly.
  • Heat oil in a frying pan.
  • Using a large wooden spoon, put mixture in the oil, one spoonful at a time. Don’t overfill the frying pan as the mixture rises and spreads. Leave a space between each spoonful.
  • Fry for 5 minutes on each side or until golden.
  • Drain on kitchen towel and serve warm.
  • Serve with peanuts as a snack or as a side to African Stew.

Questions & Replies

  1. Hi, I am new. This recipe sounds great. I will make it tonight. However, I found another that also adds clove and nutmeg and curry with the onion and ginger. Usually, I follow first time recipes to the letter. I think I will incorporate these 2 together and hope for the best. What do you think?

  2. So yummy! My fritters where moist. My plantain was overripe. I did just mix flour to just mixture fell off a wooden spoon slowly. This was nice and spicy and I will make again. They did stick to the bottom so a non stick pan would be a good thing. Thanks. Made for ZWT 2011.
