Tlayuda With Black Bean Puree (Aka Mexican Unpizza)

"This is the genuine article, an Oaxacan specialty. Not to be called pizza. Better than the sum of its parts, the texture is key. I served with a Louisiana hot sauce, you may want to serve with salsa if you are not into things too hot. Other beans would also work well with this. As published in the NY Times.   • Preheat oven to 450 degrees.
  • If using dried beans, add salt, pepper, garlic, onion, chili powder and cumin in last few minutes of cooking. Place mixture in blender or food processer with enough liquid to allow machine to do its work and roughly puree.
  • If using canned beans, add seasonings and warm mixture gently in a saucepan, stirring, to take the edge off of the garlic and onion. Then roughly puree with a little of the liquid as necessary.
  • Place the tortillas on pizza peel or baking sheet and evenly spread with the bean mixture and then the cheese.
  • Bake for 5 minutes, then sprinkle with cabbage and cilantro if using. Bake another 5 minutes until the topping is hot and tortilla is crisp on the edges. Cut into wedges if desired.

  1. I had houseguests (1 vegan-ish, 1 not) and they both really enjoyed this recipe. The only change I made was to replace the cheese with vegan cheese. I will definitely make this again because it is easy, delicious, and healthy! Next time I will add the cilantro after cooking, though, because I don't really like it wilted.
     
  2. So easy and so good!! I used canned beans and added a bit of red pepper in with the garlic and onion...I had whole wheat tortillas on hand, some low-fat mozzarella string chesse snack sticks around... and because I love cabbage and "drink" it everyday, (I'm a big juicer fan) I piled it on and loved the extra crunch it added. I'll be sure to include the cilantro next time to further the textural fun!! (I also would LOVE it with goat cheese or feta; this time I just made it spur of the moment with what was available!!)) Just as easy as dialing up for a take out meal, but so much better for you!! This will be another new regular for my menu that my friend - Kumquat the Cat's friend - has introduced me to!!! A wonderful recipe - THANKS!!

Most relevant thing to mention here is that I am a vegetarian, and recently became a&nbsp;vegan&nbsp;(almost 100%). To put vegetables and other things not meat or fish on the table I work as an actuary (in my case anyway, a combination of statistician, number-cruncher and/or programmer). For fun I like to travel. Just came back from&nbsp;Namibia, a peaceful democracy in Africa with lots of animals! Got some terrific pictures of lions, leopards, cheetahs, elephants, rhinocerous, hyenas, all kinds of antelopes, giraffes and zebras. Namibia is the second most sparsely populated country per square mile, just behind Mongolia. Update:&nbsp; We went to Italy this Spring.&nbsp; We had lots of pizza and pasta.&nbsp; The pizza is so much better in Italy, particularly the crust.&nbsp; The Amalfi coast was absolutely beautiful.&nbsp; Spectacular natural scenery (Canada and Alaska are really beautiful, Patagonia in Chile is sublime, Iceland is unique) has been my latest passion as far as travel destinations but I have seen quite a few big cities too (Paris, Berlin, London and Madrid to name a few). On my bulletin board at work I keep a list of every country I've visited (other than the U.S. of course). So far I've made it to five continents: Europe, Africa, South America, Asia and North America of course. I've got only two other continents to conquer:) I don't usually have difficulty finding vegetarian dishes here in the U.S. or overseas, but finding vegan dishes is much harder. I have no kids, just cats, Kumquat, Cranberry, and more recently Quincy and Kiwi. They are purebreds, of the breed alley caticus (okay, American shorthair I guess). Our cats are not vegetarians, though my boyfriend (significant other, long-term partner, whatever) is. I am a friend of all animals both tamed and wild. In addition I am a freethinker and my boyfriend studies philosophy. Either way, we get along pretty well.&nbsp; Also, please allow me to say that my BF and I recently bought a condominium in NYC.:)&nbsp; Pet peeve?
