To Die for Stove Top Beans

"This is a wonderful variation on baked beans and very easy. I've taken it for pot lucks and everyone wants the recipe. A heartier variation of this is to add a lb of browned hamburger."

ingredients

  • 6 (16 ounce) cans beans (a variety of your favorites, e.g. navy, garbonzo, kidney, white, black, etc)
  • 2 (1 lb) packages sliced bacon
  • 1 cup molasses
  • 1 cup brown sugar
  • 14 cup mustard
  • 18 cup white vinegar (or more to taste)
  • 1 diced onion

directions

  • Dice, brown, and drain bacon.
  • Dice and brown onion.
  • Add beans, (lightly drained to preserve just a bit of the juice).
  • Add bacon and onion.
  • Add molasses, brown sugar, mustard and vinegar.
  • Bring to boil and simmer about 30 minutes.
  • Enjoy!
  • These can be kept on a low heat for hours, on the stove or in the crock pot.

I am a retired healthcare executive. My career was in Seattle and we are now on the other side of the state enjoying the four seasons. We do miss Seattle and the more moderate climate, but we don't miss the traffic and cost of living. Of course, our 5 feet of snow last winter made us (momentarily) quesiton our decision to move. I love collecting recipies and cooking "comfort food" on these cold winter days. I've been a zaar member since it started. I miss Troy and Gay, but love the site and the friends I have made on zaar.
