Toasted Vegan Avocado and Tomato Sandwich

- 1 bagels, of your choice or 2 slices of your favorite bread
- 1 tablespoon vegan margarine or 1 tablespoon hummus, enough to spread on both sides
- 3 -4 slices avocados, depending on size of the bread
- 1 1⁄2 - 2 slices tomatoes, again, depending on size of the bread
directions
- Separate the bagel halves if using a bagel.
- Spread evenly with vegan margarine or hummus.
- Arrange the tomato and avocado slices on one side. I usually put the tomato on the bottom, it seems to stay together better.
- Put the other side on top of the bottom half and place in the toaster oven until margarine melts or it's nice and crispy.
