Tofruiti Mousse

  • 4 tablespoons firm tofu
  • 4 tablespoons whole milk ricotta cheese (try soy yogurt or silken tofu as a non dairy alternative) or 4 tablespoons cottage cheese (try soy yogurt or silken tofu as a non dairy alternative)
  • 1 teaspoon pureed prune
  • 1 medium pear, diced
  • 12 banana, diced
  • 1 -2 canned apricots or 1 -2 fresh apricot, blanched and peeled
  • 2 -6 2 -6 tablespoons instant baby oat cereal flakes (make sure to use the instant kind that resembles flakes and needs to be reconstituted with a liquid,) or 2 -6 tablespoons other instant baby cereal flakes (make sure to use the instant kind that resembles flakes and needs to be reconstituted with a liquid,)

directions

  • Place all ingredients except the baby cereal in a blender or food processor and blend until pureed.
  • Add 2 tbsp baby cereal flakes to mixture and blend.
  • Continue adding dry baby cereal and blending until puree is the consistency of a smooth mousse.
  • Spoon into serving cups, chill for 10 minutes or longer and then serve.
  • Cover cups with cling wrap if chilling longer than 10 minutes.
