  1. Brush the sandwich toaster with a little sunflower oil and preheat to its highest setting.
  2. Mix together the tofu, carrot, onion, seasoning, and raisins. Very carefully split the pitta bread open with a sharp knife taking care not to puncture the crust. Stuff the carrot mixture into the pitta and flatten out the filling to give an evenly filled sandwich.
  3. Place the pitta in the toaster, close the lid, and cook for 5 minutes until the pitta is crisp.
