  • Preheat oven to 350F.
  • Place tofu in a bowl and make smooth using an electric mixer. Add applesauce, vanilla, almond extract, vegetable oil and brown sugar. Mix for 3 minutes. Scrape sides and mix for 2 minutes more.
  • Add flour, baking soda and cocoa, mix well. Scrape sides and mix 1 minutes more. Add chocolate chips and pine nuts, blend in on low.
  • Place cupcake papers into muffin tin. Spray papers with nonstick spray. Spoon evenly into the 12 cups.
  • Bake 24 minutes on middle rack or until a toothpick comes out clean.

  1. really good muffin recipe and something a bit different too -LOVED THEM...i take the lazy girl approach with tofu cakes and throw a block whole into my processor along with a small apple to start the base of the batter going and add most of ingredients from there...i tossed some spice into this with the cocoa ((cinnamon and chili pepper))-mostly because i made it the same day that i was making some mexi. typy chili and bean things and it was all right there in front of me {{ :) }}...used carob chips (which worked really well with the earthy flavors) & absolutely adored the pine nuts (went heavenly with the cocoa)... thanks for a super good new treat!!! a winner and something original!! :)
