- 1 cup arugula leaf
- 1⁄2 cup basil leaves
- 1 large garlic clove, minced
- 1 lemon, juice of
- 1⁄3 cup extra virgin olive oil
- 1⁄4 - 1⁄2 teaspoon red pepper flakes
- salt & pepper
- 2 cups tomatoes, chopped & seeded
- 1⁄2 small red onion, finely chopped
directions
- In a medium sized bowl, combine chopped & seeded fresh tomatoe's with finely chopped red onion. Set aside.
- Combine the arugual, basil, garlic and lemon juice in a food processor. Season with red pepper flakes, salt & pepper. Stream in olive oil while running processor to form a pesto-like sauce.
- Toss sauce with tomato & onion mixture.
- Let sit while preparing chosen meat, veggie or pasta base.
