Tomato and Spinach Frittata

"There are lots of Spinach, Tomato recipes but when I checked this one is a little different. I threw it together and liked the result. I say it is for 2 but that is if it is served with a salad and a roll. Hope you enjoy it. I like lite Havarti but use your favorite cheese. The hot spice is optional but it does give some pep to the recipe. An 8" pie plate works but it needs to have at least 1 1/2 " sides. I used an 8" x 6" casserole dish. I used adobo chili pepper for my "Hot" spice."

  • Pre heat oven to 375°F.
  • Lightly spray a baking dish with Pam or other No Oil spray.
  • Place the cottage cheese in a strainer and drain for 5 minutes.
  • Pack the spinach on the bottom of the dish.
  • Add the sliced onion.
  • Sprinkle on the Adobe spice.
  • Combine the eggs and cottage cheese in a food processor and puree until the mixture is very smooth.
  • Pour over the spinach.
  • Arrange the tomato slices on top.
  • Sprinkle on the grated cheese.
  • Bake in 375 oven until golden and the eggs are cooked apprx 25 minutes.

  1. i chose this recipes for the Vegetarian swap tag game because of my large amount of garden tomatoes and fresh herbs, I did increase the chili flake amount, also used old cheddar cheese, thank you for this delicious recipe Bergy!
     
  2. Very tasty fritatta, and quick and easy to put together, had no havarti in so used old sharp white cheddar, I used both the chili flakes in the ingredients and the adobo spice in the directions, turned out great!
     
  3. Just got thru with my first slice.....made it for breakfast. Love the ease of prep...and being able to add whatever vegs I'm craving, and not having to cook them first! And of course bacon. I did not bother to puree the egg mixture, just used my whisk. I enjoy adding vegs to my eggs, and this was a simple easy twist. This one is a keeper......will have to stop myself from eating the whole thing!
     
  4. I added some cooked bacon cut up on top of the sliced onions. Loved the flavor and the ease of preparation. Also used ricotta cheese as that is what I had. We enjoyed this with blueberry muffins,<br/>Thanks for the great brunch recipe. Carole in Orlando
     
  5. I loved this! It was quite tasty. :) After making it a few times I started adding in other leftover veggies from my fridge... mushrooms, zucchini, broccoli florets, squash, etc. It's a delicious way to use up your leftovers! We make this frequently. Thanks!

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
