- 1 onion, grated
- 4 tablespoons butter
- 1⁄4 cup sugar
- 1 large fresh tomato, peeled, seeded and minced
- 2 (64 ounce) cans tomato juice
- 1⁄4 teaspoon fresh ground black pepper, to taste
- 1 teaspoon dried basil
- 1 bay leaf
- 1⁄4 teaspoon salt, if desired
directions
- Cook grated onion in butter in large stockpot until tender and translucent.
- Add all remaining ingredients except salt.
- Bring to gentle boil, reduce heat, and simmer one hour.
- Taste for seasoning, adjust sugar, pepper and salt if needed.
- Remove bay leaf before serving.
