  • Sprinkle salt over cucumber; toss gently and let stand 30 minutes.
  • Drain cucumber slices and press dry between paper towels.
  • Combine cucumber, green pepper, onions& tomatoes.
  • Combine vinegar and next 6 ingredients in a jar.
  • Shake vigorously.
  • Drizzle over vegetables; toss gently.

  3. This recipe is so tasty have made it for many potlucks. I belong to a cooking club and I am presenting it along with the recipe at our next function. If you have left overs, just drain the mixture so the veggies stay crisp for the next day.
     
  4. Had it as a side dish at a BBQ when it was 100 degrees outside. Nice because I didn't have to worry about keeping it cold. Very colorful dish; easy to make and tasted wonderful!

Tweaks

  1. I saw Derf's picture and decided to make this dish. It is easy and perfect for those hot summer days. It has a good blending of flavors. I used a white sweet onion instead of the red and an orange pepper which added a touch more color. Something I am sure to do again. Thanks!
