  1. In medium bowl, combine tomatoes, chile, mango, red onion and ginger.
  2. In small saucepan over medium, heat olive oil. Add coriander seeds and cook for 1 minute. Remove from heat and stir in vinegar and salt.
  3. Pour warm spice mixture over tomato mixture. Let stand 30-60 minutes.
  4. Serve with vegetables, Mexican food or place in blender and chop for a gazpacho.
