  • Dip fresh tomatoes into boiling water for about 30 seconds to remove skins.
  • Roughly chop tomatoes and add to large pan.
  • Add thinly sliced lemons along with any juice that is left over.
  • Simmer on stove for 30 minutes or so until tomatoes and lemon rinds are soft.
  • Add pectin and butter.
  • Bring tomato mixture to boil.
  • Add sugar and bring to boil. Boil for 1 minute.
  • Pour into sterilized jars and process in water bath for 15 minutes.
