- 8 cups chopped peeled tomatoes
- 2 lemons, quartered and thinly sliced
- 1 teaspoon butter or 1 teaspoon margarine
- 12 tablespoons pectin (I use Ball Pectin)
- 9 cups granulated sugar
directions
- Dip fresh tomatoes into boiling water for about 30 seconds to remove skins.
- Roughly chop tomatoes and add to large pan.
- Add thinly sliced lemons along with any juice that is left over.
- Simmer on stove for 30 minutes or so until tomatoes and lemon rinds are soft.
- Add pectin and butter.
- Bring tomato mixture to boil.
- Add sugar and bring to boil. Boil for 1 minute.
- Pour into sterilized jars and process in water bath for 15 minutes.
