Tomato Salad

"This is a very simple salad. My mom would make it as a side dish for omlettes for brunch. I usually serve it with grilled steak or by itself. for those of you who do WW, this is 1 point per serving."

  • In your serving bowl, put the cucumbers and salt and toss.
  • Set it to the side for 10 minutes.
  • Cucumbers will"sweat".
  • DO NOT TOSS THE WATER!
  • This is part of your salad dressing.
  • Add the tomatoes, scallions and olive oil and toss.
  • Put it in the fridge until you are ready to eat.
  • The longer it sits, the better it tastes.

  1. Perfect! I left the cuke seeds in because I like them, and added lots of cracked black pepper. Thank you for the idea--I tend to eat tomatoes and cukes separately. I tried it twice, once using salt first, and the second using it only as a seasoning rather than a leeching ingredient. I prefer the results using it as a topping, where you can still get that crunch. I bet some slivered mint or basil might also taste good. Thanks for a winner!

  4. I made this but used sesame oil instead as I was making an Asian inspired type dinner, it was pretty good. I will make this again OH! and try Bee's suggestion of avocados... mmm. Thanks for posting!
     
  5. I make this all the time. It is fantastic. For some variety, add some chopped red onions instead of scallions and/or add some avocado. It is delicious! Sometimes I just eat this with bread. Oh, and to make it even better add some grated feta cheese on top (I know it is not quite WW any more, but it is oh, so good).

  1. I make this all the time. It is fantastic. For some variety, add some chopped red onions instead of scallions and/or add some avocado. It is delicious! Sometimes I just eat this with bread. Oh, and to make it even better add some grated feta cheese on top (I know it is not quite WW any more, but it is oh, so good).
     
  2. Who knew something so simple would taste this good. I left the skin and the seeds on/in the cucumber and used a splash of balsamic vinegar instead of olive oil. Next time I'm gonna add some garlic. Thanks!
     
  3. So good & so easy! I'm glad we have an abundance of tomatoes in our garden - we will have this salad often. I used an English cucumber (my preference) and I substituted a small vidalia onion for the scallions. Thanx Daniele!

I live in Rockville, MD which is 20 minutes north of Washington DC. I love to cook, read, go bike riding with my Hubby, Salsa dancing with Hubby, cook out with all our friends and travel. My favorite cookbook is one my mother wrote, From My Grandmother's Kitchen by Viviane Miner. It is a Safardic cookbook and has every single recipe my mother has ever made. I used to have a BIG black cat named Danzig, but he passed away the summer of 2005. We now have 2 cats, a calico who is mostly white (AH! White hair everywhere)and a black and white "Tuxedo" cat (He looks like he's wearing black tuxedo tails) They're names...Lilo and Stitch! And as pet-peeves go - why can't people use the ear piece for their cell phones when driving their cars?! I was never really into cooking when I was younger. Even when I was just out of college, I was living on Can openers and Mircowaves. I don't even know when the change happened. All of a sudden, I wanted to cook. I wanted to bring joy to everyone'e mouths. I wanted to be.....a chef. Well, I've come a long way from the can opener; I put it down and just never looked back. Now the microwave is just a big defroster and I use the can opener occasionally (hey, friends are friends! Just because I grew doesn't mean I had to completely dump my old friends. Right?).
