  • Cut tomatoes into slices about 1/2 cm thick.
  • Spread slices out in a neat circle around the edge of a bowl, with a few in the middle. You can make up your own design, whatever you like.
  • Sprinkle some olive oil onto the tomatoes; making sure that it covers all of them.
  • Sprinkle with some balsamic vinegar.
  • Next, season with salt and pepper to taste.
  • Slice up some chives into small pieces, and shake them over the top.
  • Add them to taste, though if you have enjoy pepper, then plenty will not ruin it.

  • You can serve it strait away, but you can also refrigerate it. It is nice if served slightly chilled.

  1. I had this for lunch today, accompanied by cottage cheese. Very tasty! I did add the chives because I like their flavor, also added some chopped green onion, and chilled for an hour before eating. Thanks Harry! :o)
     
  2. A really good simple salad. I used lemon juice instead of vinegar considering we do not use Balsamic for religious reasons. I added a little sliced green onion rather than chives as I had it on hand and cubes of goat feta cheese. I would make this salad again the same way.

I'm an ex-studant now working in my early 20s. I love cooking - there's pretty much nothing I won't try making, but like everything in life I tend to have to avoid the more expensive things (which is pretty much all the best ingredients!) unless it's a relatively special occasion. Although I enjoy flavour, I tend to shy away from spices as I have a habbit of ruining my dishes with over zelous sprinkling, so most of my dishes rely more on well chosen ingredients to provide the flavour than actual added herbs etc.
