- 1 pint grape tomatoes, halved
- 2 tablespoons olive oil
- 1 lemon, juice of
- 1⁄4 teaspoon sea salt
- 1⁄8 teaspoon pepper
- 2 tablespoons fresh basil, chopped
- fresh basil (to garnish)
directions
- Bring tomatoes to room temperature.
- Toss all ingredients and allow to sit 10 minutes for flavors to blend.
- Plate up the salads and garnish with a basil leaf or two and fresh ground black pepper if you like.

Sometimes simple and fresh is best and that is certainly the case with this salad. I halved it and had it on some bread with hummus and that not only tasted good but felt really healthy to eat too. The balance of lemon with the oil was just right as to bring out the natural taste of the tomatoes without overpowering them. Made for Vegan/Vegetarian swap.
