- 4 ounces chopped tomatoes
- 2 tablespoons white wine vinegar
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried thyme
- 1⁄4 teaspoon Dijon mustard
directions
- Put all the ingredients in a food processor. Whizz for about 20 seconds until smooth. Pour into a jar and shake well before serving.

I made a variation of this over the weekend. I made this recipe with oil (just 2 tablespoons) as suggested by Chef Susan in another review. It came together beautifully - used fresh basil and thyme. I tried it with the 1/4 teaspoon dijon and thought it needed a bit more - maybe because I used balsamic vinegar as that is what I had on hand. I'll try it next time with the white vinegar. Thanks for posting - this is tasty!
