  1. 1. Boil a large pot of water. Salt the water to taste and bring it to a full boil. Submerge the tomatoes in the boiling water. When you can see that the skin is coming off remove the tomatoes with a slotted spoon. Peel away the skin.
  2. 2. Use the same water to cook the pasta.
  3. 3. Heat the oil in a large pan and add garlic. Fry for 1-2 minutes and add the blanched tomatoes, season well with salt, black pepper. Cook for another 5 minutes on a low heat.
  4. 4. Add Mascarpone cheese and simmer for 5-10 minutes stirring frequently.
  5. Stir in the chili powder, Parmesan cheese and chopped basil.
  6. Serve immediately. Delicious!
