  • Preheat the oven to 350 degrees fahrenheit, and spray a jumbo muffin pan with non-stick cooking oil.
  • Whisk all wet ingredients together : the maple syrup, eggs, sugar, applesauce, yogurt, and sour milk.
  • Stir in the pears and pecan pieces.
  • In a separate bowl, whisk together the dry ingredients : flour, salt, and baking powder.
  • Fold the dry ingredients into the wet ingredients carefully, until just mixed.
  • Scoop into a dozen muffins (they will be huge in a regular pan but I got away with it).
  • Bake on centre rack, rotating every 15 minutes, for around 30-50 minutes, depending on what pan size you're using.
  • Wait 5-10 minutes before removing or they'll crumble! Enjoy! You now have a muffin that tastes and feels like a delicious pancake!
