Copycat KFC Coleslaw: the Real Thing

"I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. Note: This is one of the recipes I adopted in the Great 'Zaar Orphan Adoption of 2005. I hope you enjoy it."

  • Mix oil, onions and sugar.
  • Add tarragon vinegar.
  • Fold in Miracle Whip.
  • Pour over grated carrots and cabbage.
  • Fold in well.
  • Refrigerate in an air-tight covered dish.
  • Best if made the night before serving.
  • The tarragon is the secret seasoning.
  • Compare with the real KFC coleslaw.
  • Enjoy.

Questions & Replies

  1. Why is no one mentioning depleting the cabbage of its water to keep it crunchy and prevent sogginess? This is not the KFC recipe I know. Mixing a teaspoon of salt with lg head of shredded cabbage and setting it in a colander over night is key, to the KFC result, by my opinion.
     
  2. Are we quite sure about the onion? I dislike onion if it's not freshly cut, and I believe I would know if KFC had onions in their coleslaw, marinating overnight.
     
  3. How do I delete a saved recipe?

  1. I managed a KFC in Southern Oregon and had to make the slaw dressing quite a few times. This is the closest recipe I've found online. I'm sure there is really no difference between this and the recipe we used from corporate. The Miracle Whip is true, and NO MILK.... I can't tell you how many times I was asked what milk we used. The recipe was very simple. 1 part then 1/2 part then 1/2 part. So if you use 1 cup of miracle whip, you use 1/2 cup sugar and 1/4 cup, here is the argument from everyone, Apple Cider Vinegar, dash of salt, no pepper. This is a recipe for 1 head of cabbage, 1/4 head of red cabbage, 2 medium carrots and 1/4 white union, all rough shred. Increase it as you need it just use the. It's always made in the morning after the previous days batch is packaged. If you ever get a dry slaw from KFC, they had to make a late batch and it didn't get a chance to marinate. 24 hour minimum to marinate. Corporate never would give the recipe to a manager but the GM of our franchise was a bit lazy and called each of us so he wouldn't have to come in and make it.
     
  2. I've been making this recipe for the past two years and I get the same question every time I serve it at gatherings, "Did you get this at KFC?" ...... My tips? 1.) I use dried tarragon and apple cider vinegar (instead of tarragon vinegar), and still get the same flavor; and 2.) I make the coleslaw about three days in advance so it has the flavor and sharp bite of KFC's.
     
  3. I worked at KFC for years and made the coleslaw every few days and this is very close to the recipe. We used apple cider vinegar though, Miracle Whip (not regular mayo)and CELERY SALT. That may be the missing ingredient. I have not tried this recipe yet but I will and I'm looking forward to it. I love cole slaw in general and KFC is my all time favorite. I craved it constantly while pregnant, haha
     
  4. Great recipe! No tweaks needed. I can’t for the life of me understand why there always seems to be far more people who don’t follow the recipe exactly as listed than those who do. Follow the recipe exactly, then review it, then suggest tweaks.
     
  5. was only so-so.... i added a few dashes of worcestershire sauce made it way better. also put the chopped cabbage in a fine mesh strainer over a larger bowl.. salt the cabbage and let sit for an hour. rinse it then pat it dry. this will draw out any excess moisture and prevent the slaw from getting runny.

Tweaks

  1. I made the KFC Cole Slaw back in the 1970's at their local site. It was a large batch. When I left KFC I broke the recipe down in quantity for family use. The carrot is only for color so very very little. I do not recall much onion at all as said in this recipe if any. The Miracle Whip is Salad dressing. As I have kept making this over the years, I have used packaged shredded cabbage and it is still well liked by family And easier too.
     
  2. I use the bags of already shredded cabbage with carrots. And for diabetics, use your go to "pretend" sweeter. Use 2large bags for 2 heads and 1 large bag to half the recipe ??
     
  3. The recipe I have used for this does not use Miracle Whip. It has very little onion, mayonnaise and buttermilk. It also uses Lemon Juice. It tastes exactly like the KFC. I got the recipe from someone who worked there. Tried and true
     
  4. My husband is diabetic and my children are sensitive to sugar. I replace the sugar with Xylitol or Agave (which ever one of the two is on hand). The secret is in the sweet sauce ... :-)
     
  5. I couldn't find tarragon vinegar, so I made my owm by soaking tarragon leaves in white vinegar for a few days. Worked great. Also, I substituted stevia for the sugar. This recipe is delicious!
