Tortellini Caesar

"Quick and Easy, meatless entree. I served this with a side of pineapple rings stuffed with cottage cheese, and refrigerated bread sticks. This is another recipe that my husband enjoyed, and I have no idea where I got it."

  • 1 (9 ounce) package cheese tortellini, cooked
  • 1 bag romaine lettuce
  • 34 cup caesar salad dressing (I prefer Ken's Steakhouse "lite" Caesar Dressing)
  • 1 tomatoes, diced
  • 12 cup parmesan cheese, freshly grated
  • 1 cup crouton

directions

  • In large bowl, add Romaine, tomato, parmesan and Tortellini.
  • Toss to mix.
  • Add Caesar Dressing just before serving-- toss to coat and top with croutons.

  2. I very simple, tastey recipe. I just wanted a little more "Oomph!". I might experiment with other add in next time like marinated artichoke hearts or olives.
     
  3. Very yummy for a hot night! I didn't add the tomatoes, but added my own homemade croutons. Very good, and will make it again!!
     
  4. I served the pasta and salad separatly, but they were both extremely popular and many people at the table mixed them at my suggestion.

I have a growing family - 3 horses, 2 dogs (1 being a Great Dane)!, 2 children, 2 cats and a boyfriend. I work quite a bit either at work or on the farm taking care of the "children" - my boyfriend is a stay at home "step-dad" to all and is a former chef so we like to find new ways to cook old foods. This year we will be growing an organic garden and I am ever so excited about it. Organics are a large part of our lives, and they can really put a strain on your pocket book!
