Tortellini Soup

"This is the easiest and most delicious soup you'll ever make. Mix it up with cooked sausage for those who love meat. I use my immersion blender to chop the stewed tomatoes because I don't like chunks of tomato in my soup. I perk up my soup with some red pepper flakes. I also snip my spinach with kitchen shears before putting into the soup."

  • Bring broth and stewed tomatoes to a boil.
  • Add frozen tortellini and spinach.
  • Simmer for the amount of time on your package of tortellini.
  • Add cubed cream cheese and stir until cream cheese is melted throughout soup.
  • Serve with crusty bread.

  1. One of my co-workers makes this soup and we all love it. I made it a couple of days ago and it was delicious. I blended the cream cheese into the broth and tomatoes with an immersion blender and added some garlic powder, onion powder and oregano, but otherwise followed the recipe. It's a stick-to-your-ribs soup! Yummy!

Hmm... let's see.. Cooking is my passion... I'm retired now and able to cook and bake every day. I think the most helpful cookbook that I own would have to be The New Doubleday Cookbook. I just love kitchen gadgets and have many of them. Besides cooking I love to sing and belong to the Sweet Adeline's International. I get very annoyed at people who are LATE! I think it's just as easy to be late as it is to be on time. Well.. thanks to all of you at Zaar for all of your terrific recipes and ideas that bring my friends and family much joy and happiness. They get to try all of my new recipes.
