Tortellini With Mushroom and Garlic Sauce

ingredients

  • 18 ounces cheese tortellini
  • 2 tablespoons olive oil
  • 1 lb mixed mushrooms, sliced
  • 1 teaspoon garlic, minced
  • 10 ounces peas, slightly defrosted (preferably in butter sauce)
  • 7 ounces roasted red peppers, diced
  • 34 teaspoon salt
  • 18 teaspoon black pepper
  • 14 cup parmesan cheese

directions

  • Cook tortellini according to package directions, drain and set aside.
  • Saute mushrooms and garlic in oil until tender: 5-6 minutes.
  • Add peas, roasted peppers, salt and pepper. Cook until heated throiugh: 2-3 minutes.
  • Serve over hot tortellini.
  • Garnish with parmesan cheese.

  1. Mmm....great comfort food! We really liked this a lot. The only sub I had to make was that I didn't have frozen peas, so I used canned early peas.
