  1. Bring broth, onion, carrots, celery, bell pepper, potato, tomato paste, bay leaf, garlic, cilantro, salt and pepper to a boil in large pot.
  2. Reduce heat and simmer for 20 minutes.
  3. Add zucchini and tomato.
  4. Simmer 15 minutes and remove from heat.
  5. Stir in jack cheese.
  6. Garnish with jack cheese, avocado slices and tortilla chips.
