Toss It in the Crock Pot and Go Roast

ingredients
- 2 1⁄2 lbs top round london broil beef
- 1 (10 1/2 ounce) can cream of chicken soup, undiluted (or any cream soup)
- 1 teaspoon beef base (I use a paste, but I am sure bouillon would work)
- 1 (1 1/4 ounce) envelope onion soup mix
- 1⁄2 - 1 lb baby carrots
- 6 medium potatoes, unpeeled and quartered
- 1 onion, peeled and quartered
directions
- Toss onions, potatoes and then carrots into crock pot.
- Lay meat on top of that (may have to smoosh it in a little).
- Pour on the soup, soup mix and dab the base on top.
- Turn the meat over and then over again, so that some of the soup goes underneath the meat, but some is still coating it.
- Sprinkle with black pepper.
- Cook on low for about 6 hours or so.
- I have made this a few times and have never had to add water-- the soups and meat juices make a lovely thick gravy.
- I make this in a 6 1/2 quart Rival Slow Cooker-- I know it cooks faster than smaller pots.

This was WONDERFUL! So easy and so flavorful. I didn't change the recipe at bit, except to use the option of bouillon instead of the beef paste. My husband and family LOVED it! My husband requested to have it for dinner again this evening (we still have some leftovers - I used a big roast)! Thanks so much for sharing this one!

I am also a fan of all things Amish, so I have quite a collection of things picked up in Reading, Lancaster and surrounding areas here in Pennsylvania. <br /> <br />I have 4 kids, who are the loves of my life and cooking for them and my husband keeps me on my toes! ;) <br /> <br />We bought an ice cream parlor in March 04 and it's been quite an experience! <br /> <br />Note: I love getting feedback on my recipes; all I ask is that you actually *make* them before reviewing them. <br /> <br />Also, if you make changes or substitutions, I'd love to see your suggestions and/or comments, but I'd appreciate no rating at all if it's not made as posted. Too many recipe reviews state margarine subbed for butter (if I list butter, it's REAL butter), different spices, low-fat ingredients, whole wheat flour instead of white, etc. The recipes will not work/taste as intended, so it's really not fair to rate them as such. <br /> <br />I'd also really appreciate it if you refrain from rating a recipe if you overcook or overbake it or it you don't refrigerate or store as listed. <br /> <br />I, of course, will adhere to the above when rating recipes, too! <br /> <br />Thanks and have a great day! <br /> <br />My Rating System: <br /> <br />***** A delicious recipe that was thoroughly enjoyed.
