Directions

  1. Heat broiler.
  2. Coat a small saucepan with cooking spray and saute onions over medium heat until brown.
  3. Stir in beans and hot sauce; cook and stir until heated through.
  4. Mash beans and mix in half the salsa.
  5. Wipe out skillet.
  6. Over medium heat, toast tortillas on both sides until slightly crisp.
  7. Spread tortillas with bean mixture.
  8. Top each tortilla with corn, cheese and jalapeno.
  9. Broil until cheese is bubbly.
  10. Top each with lettuce, sour cream and remaining salsa.
