Touchdown Taco Dip

"This dip is to die for!!! I use jalapeno flavored refried beans and top the dip with fresh, seeded jalapenos, because my family likes it extra spicy! This dip is EASY and certainly a crowd pleaser! I found this recipe in one of my Pampered Chef Cookbooks."

  • Spread the refried beans in a square stone baker (or a 9-inch square baking dish).
  • In a mixing bowl, combine cream cheese, sour cream, taco seasoning, and garlic.
  • Mix well with electric mixer.
  • Spread cream cheese mixture on top of refried beans.
  • Sprinkle cheddar cheese on top of cream cheese mixture.
  • Sprinkle olives, tomatoes, onions and cilantro on top.
  • Bake at 350 for about 15 minutes.
  • Serve hot with Tortilla Chips!

  1. This is one of my favorite PC recipes and it originally called for the PC Southwest Seasoning Mix instead of taco seasoning, which is a great substitute. Also, the tomatoes, green onions, black olives and cilantro are to be added AFTER baking, not before. Hope this helps.
     
  2. Great dip! I put this together the night before, baked it, then topped w/green onion, cilantro, jalapnos, and tomatoes. Really easy, and enjoyed by everyone.
     
  3. I loved this! This is the sort of thing that would be served on toast in the UK - we don't do the 'dip' thing. I had most of the ingredients, what I didn't have or know if it was sold here was 'Taco' seasoning. I googled it (I hope I can mention this?), & we do & even onion powder & garlic powder, but they are not mentioned on our recipe sites. I dry-roast garlic & onion in a dry-pan (what people used before electric air-fryers) & added to the other spices. I had some HUGE olives to cut, pitted them myself & served on toast. I made double quantity & will top a cottage pie tomorrow with it. Doing that reminds me of my son, then a teenager, who loves cheese as much as me, made cottage pie & a moussaka, both of which would have served 8 hungry people, & made/poured a thick mature Cheddar cheese sauce over it all. He made the sauce in a stockpot & it worked out at over a litre for a 4-portion pie, we still laugh about it, I love cheese, but my tummy, as in measurements, doesn't!
     
  4. This dip is Awesome ...... I make a double batch every time, and every time it disappears! We absolutely LOVE this dip ... and it IS SO EASY to make!
     
  5. I think to suit our tastes, next time, we'll halve the amount of cream cheese & sour cream mixture; wait to put the cilantro on after it comes out of the oven or maybe not even bake it at all

Tweaks

  1. I skipped the olives and use those as an add-on for those who like them. I use jalapenos, to add a little spice. I use Rotell in place of the tomatoes. I also use cooked ground beef in the bottom that is cooked with a taco seasoning package. I also use a pack of taco seasoning and mix it with the cream cheese .
